These are great cooked on the barbecue, but can also be done in a frying or griddle pan. Fresh lime leaves are available in most major supermarkets and are worth seeking out for their distinctive flavour.

This makes a fabulous vegan meal that can be prepared in advance and served at room temperature.

Crispy puy lentil, bresaola and ricotta salad
Frying lentils with garlic boosts their flavour and texture.

Pasta with watercress and hazelnut pesto
Watercress adds a lovely peppery note to this summery pesto. You can swap the hazelnuts for pistachios, blanched almonds or pine nuts, and add a handful of basil leaves too if you like.
