Asparagus and peas
This is all about spring. In fact, that is exactly what Italians call this dish: primavera.
Crab, chilli and lemon
This is one of the most popular pastas served at my restaurant Santini in London. It is light, clean, fresh and super tasty.
Cooked cherry tomato and burrata
It is important to taste this sauce for acidity when seasoning. Fresh tomatoes are a little acidic, so I add a little sugar or honey to balance the flavours.
This is a popular choice on the terrace at Santini during the summer months.
Walnut and anchovy pesto
This tasty pesto keeps in the fridge for up to three days when covered with a layer of olive oil. It is also delicious on chicken, steak or fish.
Truffled mac ‘n’ cheese
This is my sophisticated version of that all-time favourite, though you can leave out the truffle oil if you prefer.
Tuna, rocket and harissa
Harissa is one of my store-cupboard pleasures. I also make this recipe with hot brown rice instead of pasta.
