Barbecued mackerel with orange and watercress salad

People often say that food cooked on a barbecue tastes better, and I tend to agree – especially when it comes to barbecued mackerel. All those aromatic oils burning against the hot iron, and that beautiful, crispy skin – it’s truly divine. The orange and watercress salad here is a perfect match for the deep flavours of the mackerel. You can use any really good, juicy oranges, as long as they’re sweet, but, when they’re in season, blood oranges are the ideal.

Escalivada salad with roasted tomato dressing

I think I have an escalivada salad in almost every book I’ve ever written, because I love it so much and it’s a dish you can be really creative with. For this recipe, I’ve changed things slightly by blending the roasted tomatoes with the juices from the other roasted vegetables, along with a dash of vinegar. It makes a superb dressing that is perfect with this warm, tasty salad. Enjoy!

This is a favourite dish of my mum’s – in fact, everyone at home loves it. Normally, you would just cook the cutlets on the grill or barbecue, but here I’ve fried them for a lovely crispy finish.

Meatballs are one of my favourite things to cook. They’re a great way to play around with different flavours. This recipe is very quick, and really different to any meatball dishes I’ve made before. It’s perfect for a midweek supper or tapas evening.

Tuna tortilla

This is a classic and a dish we cook regularly at home in London, just as we would in Talaván, where I’m from in Spain. I’ve had it on the menu at José Tapas Bar, too, and it’s always extremely popular. I love to eat this either hot or cold, with a strong extra virgin olive oil mayonnaise.
