Star baker (and first GBBO winner) Edd Kimber shows how to get amazing results with the minimum of ingredients and equipment.
Blueberry lemonade scones
Here’s an incredibly easy way to make scones, with fizzy lemonade making the dough incredibly light and fluffy, and also doing the job of sweetening it. As with any scones worth their salt, these are best split in half and served with jam and cream.
Olive oil, pistachio and lemon cake
This simple pistachio cake is made in a food processor, so it takes just minutes to prepare.
Chocolate chip pecan pie bars
These pecan pie-inspired bars are for people who can’t muster the energy to make a full-blown pie, pastry and all.
Pumpkin sheet cake with maple butter glaze
Made with both pumpkin purée and plenty of spices to give a tender bake reminiscent of carrot cake, but full of autumnal flavour.
Chocolate chunk peanut butter snack cake
This peanut butter cake is one of those recipes – as simple as it gets, but the sweet and salty nature makes it hard to resist.
Swedish toffee cookies
These incredibly simple cookies, a version of the classic Swedish kolasnittar (caramel cuts), are the sort you whip up with almost no effort, as they’re made and baked in under half an hour.
Gingerbread cake with fennel-roasted peaches
A family favourite, this recipe originates from Nanna, my maternal grandmother. I’ve made some tweaks to veganize it, but you’d hardly guess, as it retains all the flavour and texture of the original.
Victoria sheet cake
This is the classic British Victoria sponge given the sheet cake treatment. While it’s certainly an old recipe, it remains incredibly popular, and rightly so.
One tin is all you need
All the recipes in Edd’s book One Tin Bakes Easy use a 23cm x 33cm baking tin, and it needs to be at least 5cm deep. Edd recommends a good-quality aluminium tin, such as Nordic Ware.
