White chocolate, melon and mint fruit salad

Desserts don’t come much simpler than this white chocolate, melon and mint fruit salad. With just four ingredients and minimal cooking required, you can create a visually-stunning dish that will wow your fellow diners – and at just 285 calories per serving, it’s a healthy one, too. Try mixing up your melon varieties or chocolate type (dark, milk etc) for a new twist each time you prepare it. The subtle addition of mint springs and syrup makes this a very refreshing summer evening option.

100g caster sugar
a generous handful of mint, leaves picked, plus 3 extra sprigs for the syrup
900g cantaloupe melon, deseeded (or use mixed varieties)
100g white chocolate, broken into pieces

1. Place the sugar in a medium saucepan with 100ml water and three sprigs of mint. Bring to a gentle simmer and cook until the sugar has completely dissolved, stirring from time to time. Set aside to cool then remove the mint.

2. Using a melon baller, scoop out the flesh of the melon. Alternatively, you can slice into 2cm chunks.

3. Melt the white chocolate in a heatproof bowl set over a saucepan of simmering water, ensuring the bowl does not touch the water, then spread out thinly on a large, flat baking tray. Allow to cool and harden, then peel away curls of the white chocolate using the back of a knife.

4. Arrange the balls of melon on a large serving platter, pour over the mint syrup, scatter with the remaining mint leaves and decorate with the white chocolate curls.
