Valentine’s Day recipes: The ultimate hot chocolate sauce

This effortless sauce and a couple of tubs of vanilla ice cream is all you need to whip up a dessert for eight people in just 5 minutes.

150g dark chocolate (70% cocoa solids), roughly chopped
200ml single cream
2 tbsp light brown soft sugar
25g unsalted butter
2-3 tbsp just-boiled water from the kettle
Pinch of flaky sea salt

  1. Place the chocolate, cream, sugar and butter in a small saucepan then set over a medium heat. Stir occasionally until everything is melted.
  2. Stir in the boiling water to loosen until you have a smooth, rich and pourable sauce. Stir in the salt and serve immediately with vanilla ice cream.
