Leek and celeriac soup
An update on the classic leek and potato soup.

Tomato, pesto and pasta broth
Adding pasta to a soup makes it more hearty, while a spoonful of fresh pesto brightens things up.

Hot and sour prawn noodle soup
Any noodles work well in this soup – egg noodles, flat rice noodles or udon would all make a good base.

Chicken, cannellini bean and green chilli bowls
Fantastically filling and comforting – perfect for using leftovers from a roast chicken.

Caramelised squash, beluga lentil and rosemary soup
The humblest of ingredients combine beautifully. Best served with mounds of parmesan cheese on top.

Broccoli, coconut and lime leaf soup
Fragrant lime leaves and lemongrass bring a new spin to broccoli soup.

TAKE STOCK
At the heart of any good soup is a good stock. You can’t beat a homemade chicken stock: place a roast chicken carcass, a halved onion, celery stalk, carrot, bay leaf and a handful of black peppercorns in a large pot, cover with cold water and bring to a very gentle simmer for 2 hours, regularly skimming off any scum, then strain and cool. Alternatively, here are some really good ready-made stocks…
