Meals for one: Skagen prawn toast recipe

Skagen toast is a classic Swedish dish and makes the perfect lunch or light supper.

TAKES 15 MINUTES

1 tbsp mayonnaise
1 tbsp soured cream (or greek yogurt)
1⁄2 tbsp lemon juice, plus an extra wedge to serve
1 tbsp finely chopped red onion
1 tbsp chopped dill
150g peeled and cooked North Atlantic prawns, defrosted if frozen
2 slices sourdough (a rye or wholegrain variety is best)
Salted butter, for spreading
40g cucumber, finely sliced
Cayenne pepper, to garnish (optional)

  1. In a mixing bowl, mix together the mayonnaise and soured cream, then stir in the lemon juice, onion and dill. Fold through the prawns and season to taste.
  2. Toast the sourdough and spread with salted butter. Pile on the dressed prawns and sliced cucumber. Sprinkle with a little cayenne pepper, if liked, and serve immediately with the lemon wedge.

TIP A bag of cooked prawns in the freezer is always handy, quick to defrost and ideal if you just require a single portion.
