Olly Smith’s Amaretto sour recipe

During a particularly ferocious winter living in Edinburgh, amaretto was my drink of choice. My curiosity with cocktails led me to this, and I realised just how sublime the Italian liqueur can be.

ICE Cubed
GARNISH Lemon twist and cherry
EQUIPMENT Cocktail shaker, strainer

60ml amaretto
30ml freshly squeezed lemon juice
1⁄2 an egg white
Dash cherry bitters (optional)

  1. Add all the ingredients to a shaker and dry shake (see tip) to combine. Fill the shaker with ice. Shake vigorously to chill.
  2. Strain into a glass filled with ice. Garnish with a lemon twist and a cherry.

TIP Dry shaking is shaking without ice and then adding ice to chill. It helps the ingredients combine better, which is especially important when using egg whites.
