Quinoa has a reputation for being a bit dull, and that’s because it is! So here I’ve jazzed it up with a lot of other ingredients and finished it with a spicy dressing. This would make a good accompaniment for grilled merguez sausages or barbecued chicken.

I first had a version of this in an unassuming little restaurant just outside Lisbon. I didn’t realise how tasty such a simple soup could be. Bold herbs, plenty of garlic and a great stock.

Beef cheek burgers with mushroom mayo & pickles

Possibly the best and filthiest burger I’ve ever made! It takes a bit of time and effort as beef cheek needs a long, slow cook to become tender but, believe me, it’s well worth it.

Rack of lamb with charred broccoli, ricotta, grilled chilli & anchovy

I could eat ricotta all day, and a well-made one is like nothing else. Westcombe Dairy in Somerset makes a fantastic one, and it’s well worth seeking out on its website (westcombedairy.com). You will need to drain the ricotta the day before.

A great combination of rich, decadent chocolate, fresh fruity raspberries and the crunchy bite from the hazelnuts. A really special dessert to round off the evening.

A rather decadent way to dress up a butternut squash. Bacon or pancetta and cheese seem to be regulars in my recipes, and I’m unapologetic on this point – they do make everything taste better!

Brown crabmeat is often overlooked but this is where all the best flavour is. These scones are a doddle to make and are pretty impressive as a snack or starter. Double up the ingredients if you’re going to make them, because they won’t last long!
