This Fast 800 stir-fried pork is a brilliantly simple and speedy lunch or supper dish. If you aren’t keen on pork, use minced turkey or chicken instead.

1 tbsp rapeseed oil
175g fine green beans, trimmed and halved if large
250g lean minced pork (5% fat)
6 spring onions, trimmed and cut into 1cm slices
2 tbsp hoisin sauce
1 red chilli, finely sliced, to serve (optional)
1. Heat the oil in a large frying pan or wok, add the beans and stir-fry over a high heat for 2 minutes, or until beginning to soften, stirring regularly.
2. Add the pork and cook for 4 minutes, breaking up the mince as it cooks, or until the beans are lightly toasted in places and the pork is browning. H Sprinkle over the spring onions and cook for 1 minute more, stirring.
3. Spoon the hoisin sauce and 5 tablespoons water into the pan, and cook for 2 minutes, or until the sauce looks rich and glossy and lightly coats the pork, stirring constantly.
4. Sprinkle with chilli, if using, and serve with ribbons of cooked cabbage or leafy greens. Or make more of a meal with cauli-rice or a side of stir-fried veg.
COOK’S TIP If you don’t have any hoisin sauce, try plum, teriyaki or oyster sauce instead. The calories will vary a little. Without the hoisin sauce, the recipe contains 248 cals and 28g protein per serving.
