When you want an appetising dish in a hurry, try this recipe - it uses mostly store-cupboard ingredients and you’ll have a whole meal in a bowl in no time. The red chicory or radicchio adds a nice touch of bitterness and vibrant colour but if you can’t find any, use any salad leaves you like.

Squash & quinoa risotto

Quinoa is a real superfood. It’s actually a seed not a grain, so is gluten-free, and it’s high in protein and nutrients. We’re using it here to make a hearty risotto-style dish that’s packed with great veg and also contains some beans for extra bulk and protein. A very satisfying supper.

This hearty dish is a little higher in calories and carbs than most of the recipes in the book. Yet it makes a great family supper. Our meatballs are dead tasty but if you really want a quick meal you could use shop-bought meatballs. Just don’t tell anyone.

Courgette & yogurt soup

Soups of this sort usually need some kind of thickener, which tends to be rice, potatoes or flour, but we’re using a small amount of lentils here instead. They’re better for you and work just as well, if not better, for thickening the soup. Velvety and scrumptious.

Tofu with tomato & avocado

For the tofu lovers out there, this is a vegan version of the famous Italian tricolore salad - mozzarella, avocado and tomato. It’s super-refreshing when the tofu is well chilled, but the avocado and tomatoes have a much better flavour at room temperature, so this is best assembled just before serving, for an attractive little snack whether you’re vegan or not.

Courgette & lime cake

We love that we can get some of our five-a-day in cake form! Courgettes make a perfect moist cake and the lime really lifts the flavour to another level. Try this and we’re sure you’ll love it too. If you don’t fancy the cream cheese icing, you can simply dust the cake with icing sugar and serve it with some very slightly sweetened crème fraîche.

Chocolate & tahini energy bombs

Pop some of these in your fridge for those moments when you need a bit of an energy boost. Tahini is really popular in Middle Eastern cooking and is just as good in sweet dishes as it is in savoury. It marries perfectly with the chocolate and orange in this recipe.
