Blueberry and lemon possets
This is the perfect make-ahead dessert for all your summer parties.

Summer berry pavlova
It’s worth making the pavlova the night before you want to serve it and allowing it to cool completely in the oven (with the door propped open) overnight.

Roasted strawberries with white chocolate ice cream
This is a very simple and clever way to treat strawberries that are lacking a little in flavour or starting to turn soft. The hot berry/cold ice cream contrast is always a winner.

Raspberry friands
Friands are individual oval-shaped almond cakes that are popular in Australia. They’re made with egg whites and icing sugar, which means they are super light, and they can be flavoured with any berries. You can buy special oval friand tins online or the cakes can be baked in a regular muffin tin. Whichever shape you’re using, only fill the holes about two-thirds with the batter before baking.

Cherry and almond galette
The almond pastry is simple to make and fabulously crumbly, but you can certainly speed things up by using shop-bought shortcrust pastry instead.

Blackberry crisp
Try mixing up your berries in this summery crumble. A combination of blackberries and blueberries works particularly well.
