Quick and easy to whip up, Donna Hay’s recipe for one-bowl chocolate and coconut muffins will satisfy any sweet tooth.
300g self-raising flour
175g light brown sugar
40g desiccated coconut
25g cocoa powder, sifted
125ml vegetable oil
2 medium eggs, lightly beaten
2 tsp vanilla extract
200g dark chocolate (45-55 per cent), chopped
1. Preheat oven to 180C/gas 4. Line 12 x 125ml-capacity muffin tins with paper cases. Place the flour, sugar, coconut and cocoa in a large bowl and mix to combine.
2. Add the milk, oil, eggs, vanilla and chocolate and mix until just combined. Spoon into the tins and bake for 20 minutes or until cooked when tested with a skewer.
3. Allow to cool in the tins for 5 minutes before placing on a wire rack to cool completely.
