Royal wedding baker Claire Ptak’s trick will make your lemon cake taste like Meghan and Harry’s

Any royal wedding needs a truly spectacular cake, and that’s just what Claire Ptak of London’s Violet Cakes provided when Prince Harry and Meghan tied the knot in May 2018.

The couple asked Claire to create a lemon elderflower cake ‘that would incorporate the bright flavours of spring’, which was then covered in rich buttercream and decorated with fresh flowers.

The bake certainly rose to the occasion; and while the four-tiered finished product may look elaborate, you can actually use some of its fundamentals to inspire your own lockdown baking, as Claire has shared a simple trick with Insider that explains how to get the perfect harmony of flavours.

While the original required a staggering 200 Amalfi lemons and 10 bottles of Sandringham Elderflower Cordial, you can scale this ratio down yourself at home with any lemon drizzle recipe.

‘Home bakers can get the flavours of the royal wedding cake from the lemony loaf cake simply by swapping out half the lemon juice in the icing and drizzle for elderflower syrup,’ Insider reports, adding that after the big day, Claire even started updated her usual lemon cake with the elderflower twist to sell in her store – a move which proved incredibly popular.

It’s not an identical copy to the cake crafted for Meghan and Harry, but you can get your hands on Claire’s signature lemon loaf cake recipe in The Violet Bakery Cookbook, which was released in 2015, but is still available on Amazon.

However, the zingy, floral combination of lemon and elderflower would work well with any sponge that requires a syrup soak, so you can also just update your go-to recipe, if you prefer. We can’t think of a more delicious treat to tuck into in the current super-sunny weather.
